Fried Rice, Fried Egg, and Fried Plantain By Mukaila Ibrahim

Prep. time: 20 minutes

Cook time: 30 - 40 minutes

Ingredients:

  • 500g of Rice (parboiled)
  • 2 L of water
  • 100 ml Oil (vegetable, canola etc.)
  • Curry powder
  • Thyme
  • Mixed veggies (corn, peas, carrot, green beans)
  • Chicken stock
  • Green pepper
  • Onions​
  • Seasoning (Knorr chicken powder)
  • Salt
  • Fried egg
  • Fried plantain

Steps:

  1. Wash the rice and fry it in 50 ml oil in the cooking pot for 5 min with frequent turning.
  2. Fry the mixed veggies, onions, and green pepper (grated) for 20 min in the remaining 50 ml oil in another pot.
  3. Add the fried veggies to the rice.
  4. Add the water, and the curry, thyme, chicken stock, seasoning, and salt to taste.
  5. Cover and boil until the water dried but not burnt (30 - 35 min).
  6. Mix and serve hot or cold with fried egg and fried plantain.

Tips/Tricks:

If the rice is not cooked to your satisfaction, add more water but avoid getting the rice soggy.

I am sharing the recipe for this dish because most of its components are universal and can be eaten by majority of people on earth. It is a popular dish at every party in my country and my favorite.
